Zucchini and Tomato

Welcome September! With a slow start to the growing season we are now in the prime season for local produce in Canada. Zucchinis are in abundance at the market and there is about a million and one ways to eat them. They come in all different sizes, shapes, and are called different things depending on where you live. The following meal can be eaten for breakfast, lunch and dinner. In this recipe I used both homemade tomato sauce and garden fresh green tomatoes to this dish. If you have not tried green tomatoes, I highly suggest them as they have a tartness that adds some zing!

I know this is a variation on a few things with real names but I will call it…

Zucchini, Tomato, Egg Bake

Serves 3 hungry people (add more eggs dependent on how many people you are serving) Also, my measurements are very loose, I am a big fan of experimenting with cooking and it is hard for me to write a recipe as i’m usually throwing stuff in as I feel. Take chances, make mistakes and get messy!

  • 2 medium zucchinis in quartered slices

  • 2 cloves of garlic

  • Handful of green tomatoes cut in half or quarters, dependent on size

  • 1 jar or can of tomatoes

  • Fresh basil and oregano (for dried use about a 1/2 teaspoon of each)

  • Chili flakes or fresh chili for some spice

  • Tablespoon of lemon juice

  • Salt and pepper

  • 3 eggs (or however many you want!)

  • Cheese

Directions

  • Preheat oven to 375°

  • Heat pan with cooking oil of choice

  • Add garlic, zucchini, and green tomato

  • Saute on medium heat until veggies are cooked

  • Add in tomato sauce, herbs, seasoning and lemon juice and bring to simmer

  • Crack eggs into sauce, cover and put in oven for at least 5 minutes or until eggs are cooked to your yoke of choice

  • Once done, top with cheese and serve
